Developed by our Resident Nutritionist, Jan Marie, this chocolate chip ‘nice’ cream is deliciously healthy in the best way possible!
PREP TIME: 4-6 hours (freezing required)
COOK TIME: 0 minutes
MAKES: 1 tub of ice cream
• 1 1/2 cups coconut cream
• 1/2 cup pitted medjool dates
• 1/3 rice malt syrup or honey
• 3/4 cup raw cacao powder
• 2 tsp natural vanilla extract
• Pinch of pink Himalayan salt
• 1/2 cup natural cacao nibs
• Stevia (optional)
In a food processor or blender, add coconut cream, honey and vanilla extract and blend until well combined. Slowly add cacao powder, dates and salt. Blend well for 30-60 seconds until completely smooth. Pour into freezer-safe container, top with cacao nibs and freeze for 4-6 hours.
